Day 12...Cooking Through 25 Days of Gooseberry Patch Christmas

My husband and I were talking about goodies that our moms used to make, during our childhood, for the holidays. He mentioned that he always loved No Bake Cookies. I told him that I had the perfect recipe for them and what do you know? The recipe just happens to be in one of the Gooseberry Patch Christmas cookbooks! What are the odds of that?
Well, here it is! You can find it on pg 15 in Simple Joys of Christmas. This is another very simple recipe...but oh so yummy too!






Chocolate No-Bake Cookies

½ cup margarine
½ cup milk
4 T. baking cocoa
2 cups sugar
1 t. vanilla
½ cup smooth peanut butter
3 cups quick cooking oats, uncooked


Mix margarine, milk and cocoa together in a saucepan. Bring to a boil and continue to boil for 1 ½ minutes.

Add sugar, vanilla, peanut butter and oats; stir well.

Drop by teaspoonfuls onto wax paper. Let cool to harden.
Makes about 2 dozen cookies.

Oh sooo simple...oh so chocolatey...oh so good!

It's another busy day...but then again, when isn't it?
I will be running out the door in a few minutes to go watch my 7 yr old grandson Tryston, who lives 2 hours too far away, in his Church Choir program. I'm so excited! I just spoke to him on the phone and he told me to "look for the kid on the left in the shepard costume." I sure will...and I plan to take lots of pictures!
When I come home tonight, I will be bringing my 7 mth old grandson, Hunter, home with me. My daughter  has finals this week, and Hunter seems to be having problems sleeping at night. (Her hubby is finishing up his school 2 hours away in the other direction!) She's not getting enough rest to study.
"oh yes ma'am...I will gladly keep that baby so you can study!"
I know his momma will miss him....but I'm going to have so much fun!!! I would love to bring Tryston home with me too, but he has school. I'll get him for a few days during his Christmas break.
My daughter, her husband and the boys will be moving 4 hours too far away in about 3 weeks. They are both finishing up with school and were BOTH offered jobs at the same hospital! Is that not God or what? She's a Medical Lab Tech and he's a Physician's Assistant.
I am going to miss them so much and get up to see them as much as possible...but on the other hand...I am soooo very proud of them both!!!

So, be prepared for more simple recipes. I'll be busy with my grandson, and I won't want to stop playing long enough to cook!
