Day 8...25 Days of Cooking Through Gooseberry Patch Christmas

Picking up my 7 yr old granddaughter from school is one of the best parts of my day! I park my car in the parking lot across the street and after the nice policeman stops traffic to allow me and other happy parents and grandparents across, I meet her as she's coming out the front door. I usually just take my keys and cell phone with me. No sense in caring my ‘suit case' of a purse just to walk up there and get her. But yesterday...she comes running out the door "Gramma! Go get your purse! We're having a Book Fair!" Words only a Gramma (or parent) could appreciate!

I started reading to my grandchildren, as well as my own children, when they were very young...probably about 6 mths old, maybe younger. They have had a love for books ever since! So, Layla and I walked back inside to pick out some books for ‘her' to buy. She picked out 3 books that were just ‘girly books', she said. But the fourth book...the one that impressed me the most...was called "All About Caring for Your Puppy". She looked up at me with that sweet face and said, "Gramma, you know that I want to be a Vet when I grow up and I want to know everything I need to know before I get a job!" Music to my ears! I'm so very proud to call her my granddaughter!

On the way home we talked about what kind of Christmas treat we could bake today. I asked her if she wanted to bake Brownies again. That girl would bake a batch of brownies every day if I let her. She told me, "Gramma, Brownies aren't Christmas food. They're every day food!" So, we came home and brought out the Gooseberry Patch 101 Christmas Recipes cookbook and she found this recipe on pg 82. And of course, "you have to help me Gramma. I don't know this one."

Graham Pralines by Sandi Boothman in Camden, MI

1 sleeve graham crackers (I used cinnamon grahams)
½ cup butter
½ cup margarine
1 cup brown sugar, packed
1/8 t. salt
1 cup chopped pecans

Cover a baking sheet with aluminum foil; spray lightly with non-stick vegetable spray.

Break crackers and arrange on baking sheet; set aside.

Melt butter, margarine, brown sugar and salt together in a saucepan over low heat.
"This is your job now Gramma. Remember I can't be too close to the stove?"

Bring to a boil and boil for 2 minutes.

Pour over crackers. I stirred them around a little bit to be sure they were all covered. And if you do... spread them back out quick before they all stick together!

Chop pecans. A ziplock bag and a meat tenderizer came in handy here!

Sprinkle pecans over top.
Bake at 350 degrees for 10 - 12 minutes. Let cool; break apart. Makes about 2 dozen.

Thank you very much to Ms Sandi and Goosberry Patch for another wonderful recipe.

But most of all...thank you to my sweet princess granddaughter Layla.
If you decide to change your profession when you grow up, I think you'll make a great chef!!!

I don't know why it's showing that I posted this on Tuesday. I posted in this morning...on Wednesday. I've changed my 'time zone' status and it won't fix. Any suggestions?
