Day 5...Cooking Through 25 Days of Gooseberry Patch Christmas

Today is a good day! It's not like my other days are not good days, but any day that begins with worship is always going to be a good one! What better gift can we give those around us this Christmas than teaching them about the Gift from God? Can I hear an Amen?

I love hot cocoa. So when I went searching for a recipe for today and came across this one, I knew it just had to be. This simple recipe was found on pg 60 in Christmas All Through the House. And, I think that when I sit down to enjoy a piece of this cake, I will also have a cup of hot cocoa to help wash it down. Perfect combination, don't you think?

Hot Cocoa Cake
by 'unknown'
1/2 cup shortening
3/4 cup sugar
2 eggs
1 ½ cu. all-purpose flour
2 t. baking powder
3/4 t. salt
2/3 cup milk
4 T. or 1 env. Instant hot cocoa
Optional: powdered sugar and chopped nuts

Beat shortening, sugar and eggs until mixture is fluffy.

Add flour, baking powder and salt alternately with milk, beating well after each addition.

Spoon half of batter into a well-greased 6 cup Bundt pan. Sprinkle envelope of hot cocoa mix evenly over the batter. (Yes, my hot cocoa mix has marshmallows in it!) Top with the rest of the batter and spread evenly in pan.

Bake at 350 degrees for 35 minutes or until a toothpick comes out clean. Let stand 5 minutes and turn out onto serving plate. Delicious served warm as a coffee cake or let cool and dust with a little powdered sugar. If desired, add chopped nuts of any kind in the layer with the hot cocoa mix. Serves 10 - 12.

I wanted to show you the difference between what I believe to be one of the first Gooseberry Patch cookbooks and one that recently came out. Amazing how things can change over time. I loved the cookbook ‘back then' but I really love them now! The artwork has always been beautiful, but even more so now.

I'm sure most of you know how Gooseberry Patch began. But, if you don't..you can read it here: http://www2.gooseberrypatch.com/gooseberry/database.nsf/v.pages/f.ourstory
Apparently things went quite well for them. Look how far they have come and what all they have accomplished! I know they've sure made me happy!

Ok...that wonderful cake is done! Doesn't it look great? I bet you think it tastes as good as it looks don't you? Yepper! It sure does! And, just to warn you ahead of time....this cake is sooo moist and flaky, you must have a cup of hot cocoa or a cold glass of milk to help wash it down!

Another big thank you to Gooseberry Patch and whoever submitted this recipe! It's another keeper! (and why am I not surprised?)

Tina,

I have that book too not sure if it's the first one or not. I had Vicki and Jo Ann sign it for me at the Country Living Fair this Fall. They are so nice just like you would think after reading their books. I'd love to try this Hot cocoa cake looks really yummy!

Hey Carey! They showed a photo of them signing the first cookbook that came out. Was that, by chance, you in the photo?
